how can I style the sub menu to either be all horizontal or at least offset to the right a little? and what file would be edited?

Hello,

The module uses <joomla_directory>/modules/mod_ariextmenu/mod_ariextmenu/js/css/menu.min.css CSS file.

menu.css is original (unminified) version of menu.min.css file. It doesn't use by the module. We include the file into module package that if necessary users can modify styles and then place them into menu.min.css.

ok thank you....I am trying to get the sub to be all horizontal like the one on this link, any thoughts as to what I should add to the menu.min.css?

The module doesn't work in this way. If you want to try adapt menu for working in this way, FireBug addon for FireFox browser can be useful that investigate menu styles, HTML layout and play with them at runtime.
