Ah - I now see the problem.
I was expecting each sub folder to display as a separate entry within the Gallery menu.
what actually happens is that all sub folders are displayed as a sum total on the one page or article.

Now I get it!

Is there a way to have each sub folder as an entry point to the gallery with a picture being a link or entry point to the sub folder and then when the entry pint is selected the sub folder is displayed with its contents?

That would be *really* good!

You can create new instance(s) of "ARI Slick Gallery" module and specify path to necessary folder(s) for each instance or use "Modules Anywhere" plugin to load "ARI Slick Gallery" and override "Image path" parameter. More information about it can be found here.
