I adjusted the width of my submenu items, but when I hover over them, the highlight is the original width. I've tried adjusting different widths, but nothing gives me favorable results. Any help is appreciated.

This problem with your custom CSS rules. At least with this CSS rule:

.ux-menu ul {
width: 120px !important;
}

It is applied for sub-menus too.
